Instructions
  1. Heat oven to 375°F. Spray a 1/2 aluminum banquet pan with cooking spray. Cook pasta according to package directions; then drain.
  2. In a large pot, heat 2 tablespoons butter over medium-high heat. Add chopped onions and cook until slightly browned. Add ground beef and cook until browned. Add chili powder, cumin, salt; black pepper, beer, and milk; cook for another minute or two.. Whisk in cream cheese until melted. Add cheddar cheese, whisking constantly until cheese melts. Simmer 3 to 4 min. or until slightly thickened, (sauce will still be quite thin), stirring frequently. Remove from heat. Put pasta in baking dish and pour sauce over pasta. Add beans, corn, and jalapeno peppers; carefully stir with a spoon.
  3. Melt remaining 1 tablespoon butter in medium nonstick skillet over medium heat. Stir in breadcrumbs and green onions until coated; sprinkle over pasta.
  4. Bake 30 to 40 min. or until casserole is hot and bubbly and breadcrumbs are brown and crisp. Let stand 10 min. before serving.
