Instructions
  1. Prepare two large sheets of heavy duty aluminum foil by spraying with olive oil spray. Place a green onions and a jalapeno halves on foil sheets first. Place all remaining ingredients, except for the fish, in a large bowl or plastic bag; toss to coat evenly and divide equally onto each sheet of foil. Top vegetables with fish, then top fish with melted butter. Season with salt and pepper. Seal foil packet tightly. Bake on grill for about 20-30 minutes or until fish is done (flakes with a fork).
