Instructions
  1. 1. Combine all ingredients for spice rub and place in bag with chicken to allow to marinade for 10 minutes. While chicken marinades, combine all ingredients for tzatziki sauce and place in fridge to chill. Heat skillet with olive oil, then saute chicken breasts. 2. Heat a second skillet with olive oil, then add kale and toss around until wilted. Remove from heat, squeeze juice from lemon over kale, then top with chopped almonds. Salt and pepper to taste. To assemble pitas, spread the inside of a pocket pita half with tzatziki, then add two slices of tomato and chicken breast.
