Instructions
  1. Wash and cover beans with cold water and baking soda. Let them soak overnight. Drain and pour beans into stock pot, cover with water and salt and cook slowly for about 30-60 minutes or until their skins start to burst. Drain (reserving at least a cup of liquid) and return beans to stock pot. Add remaining ingredients, except for bacon slices, and mix well but gently with a spoon. Add some of the reserving cooking liquid until mixture is a little soupy. Pour beans into deep casserole or banquet pan and top with bacon slices. Bake at a low 300F for about 2 hours or until beans are bubbly and thick. It may be necessary to add a little more cooking liquid if the beans become dry during the late stages of cooking.
Recipe Notes

You can do a quick soak on the beans by covering the dry beans with water. Then bring to a boil and allow to cook for 2 minutes. Turn off heat and allow the beans to soak for one hour. Drain liquid before continuing with above recipe.
