Instructions
  1. Scald milk and set aside to cool.
  2. Add yeast to lukewarm water and let stand until softened or dissolved, about 5 minutes.
  3. Cream butter and sugar in a large mixing bowl.
  4. In a separate bowl, add salt to egg yolks and beat until thick; then add to sugar and butter mixture.
  5. Add yeast and water, lemon rind, cinnamon and cardamom to butter egg mixture.
  6. Add flour alternately with milk and beat well to make a smooth dough. If using a mixer, mix until dough forms a ball and sides of bowl are clean.
  7. Add dried cherries and mix until evenly distributed in dough.
  8. Let rise in a warm draft free place until double (about 1-1/2 hours). Punch down and let rise again until double.
  9. While dough is rising. Add 1/2 cup sugar and beaten egg yolk to softened cream cheese and mix until well combined and smooth.
  10. Beat remaining egg with 1T water for egg wash.
  11. In a small food chopper/processor, process almonds, sugar, and flour until almonds are ground. Add cold butter and pulse until mixture resembles a pea sized crumb.
  12. Prepare loaf pans by spraying with cooking spray and then dusting with breadcrumbs.
  13. Remove dough from bowl and divide into two. Roll each dough into rectangle, top with cheese filling and roll into log. Tuck ends under roll and place into prepared loaf pans.
  14. Allow dough in pans to rise again to double, then brush tops with egg wash and sprinkle with almond crumb. Bake in a preheated 350 degree oven for 45-60 minutes or until tested done.
