This is a great way to BBQ chicken or just cook chicken thighs to use in other dishes.

Instructions
  1. Preheat oven to 425F. Prepare marinade by mixing in all ingredients in bowl. Prepare chicken thighs by removing bone with poultry shears, then cut each thigh in half. Place in plastic Zip-Loc bag, pour marinade over chicken and refrigerate for minimum of 4 hours. Flip bag once after 2 hours.
  2. In a regular size cupcake pan, place one teaspoonful of melted butter. Swirl butter around in cups. Remove thighs from mrinade and pat dry with paper towels. Rub top of each thigh with your favorite poultry rub or seasoning. Place each thigh, skin side down, in each of the 12 cupcake wells. Brush each top of thigh with melted butter. Cover pan(s) tightly with heavy duty foil and place in oven. Bake for about 20-30 minutes or until thighs register 165F on thermometer.
  3. Change heated oven from bake to broil and set temperature to 500F. Remove thighs from cupake wells and place on cookie sheet. Baste tops with your favorite BBQ sauce or not. Place under broiler and broil until tops are bubbly and begin to brown. Serve immediately.
