Instructions
  1. Cook bacon until crisp. Drain on paper towel.
  2. In a large pot, melt butter over medium-high heat. Add celery, carrots, and onions; saute until soft. Add potatoes and chicken stock; cook until potatoes are soft. Add bacon, then using an immersion blender, process until soup is smooth. A few chucks are ok. Add cheese, seasonings, and half and half stirring well to combine. Return to heat and simmer for about 15 minutes. Ladle soup into bowls and serve.
