Instructions
  1. Melt two tablespoons of butter in medium skillet. Add fennel, celery, and onion. Saute on medium heat until vegetables begin to turn brown (carmelize). Set aside to cool.
  2. In a large bowl, mix cooled fennel mixture, eggs, cream cheese, green onion, salt and pepper. Spray two 12-muffin pans, then press a empanada disc into each of the muffin cups. Add 2 tablespoonfuls of fennel & egg mixture to each cup. Bake in preheated 375F for about 25 miutes or until tops are puffed-up and browned. Serve warm or cool.
