Instructions
  1. 1. Start the day ahead, and cut tomatoes in half. Place on rack in smoker and smoke for 1-1/2 hours. Cool and refrigerate.
  2. 2. Place diced salt pork into large pot and cook over medium heat until they just begin to crisp up. Add onions and peppers; continue to cook for about 5 minutes. Slice corn off cobbs and add to pot. Turn the heat up and cook until corn begins to brown. Turn heat down and add garlic. Cook for another 2 minutes.
  3. 3. Transfer ingredients from pot to a large oven-proof Dutch oven or roasting pan. Transfer ingredients from pot to Ducth oven. In a food processor, chop smoked tomatoes until fine. Add tomatoes and all remaining ingredients to the Dutch oven and place in a 300F pre-heated oven. Bake until potatoes are tender.
Recipe Notes

You can use any combinations of meats you want.

If you don't want smoked tomatoes, add canned crushed tomatoes.
