Dry Rubs

Coating meats with a dry rub, is a fairly quick way to infuse the flavor of the spices into the meat prior to cooking. Create a mixture of dry herbs and crush them in a mortar. Lightly rub the meat with oil, then generously coat the entire outside with the blend.  Allow it to sit for at least an hour and up to 24 hours under refrigeration. The meat is now ready to be cooked.
